Dubai Chocolate Meets Cinnamon Roll: My Take on the Viral Flavor
Since I already gave you my thoughts on why Dubai chocolate has taken over everyone's feed, I figured it was time to stop talking about it and start baking with it. And since I already have a cinnamon roll base that's proven itself flexible enough to take on a whole new identity (see: my bananas foster version), it felt like the obvious place to start.
The Recipe Evolution
I went back to the same dough I used for the bananas foster rolls, no changes needed there, and rebuilt the filling and topping from the ground up around that unmistakable pistachio-chocolate combo that's made Dubai chocolate so addictive.
For the filling, I swapped out my usual cinnamon-sugar mix for:
Chocolate chips
Chopped pistachios
Butter
Brown sugar
Cinnamon
That gave me the gooey, nutty center I was after, with the chocolate melting into pockets throughout each roll as it baked.
The topping is where I really leaned into the Dubai chocolate identity. Instead of my usual glaze, I made a cream cheese chocolate frosting, then finished each roll with more chopped pistachios and a homemade kataifi, made by toasting shredded wheat and tossing it in melted sugar until it turned golden and crisp. That crunchy, caramelized topping is the signature texture that makes Dubai chocolate so much fun to eat, and it translated beautifully onto a cinnamon roll.
The Result

Absolutely delicious. Pulling these apart gave you that same contrast Dubai chocolate is famous for: soft, rich dough and gooey chocolate on the inside, and a genuinely crunchy, caramelized pistachio topping on the outside. It's a dessert and a candy bar in one bite.
I brought a full batch into work, and they didn't stand a chance. My coworkers devoured every single one before I even had a chance to grab a second! Thankfully I'd set a roll aside for my wife the night before, and swhe loved it just as much as I hoped she would.
